 Kolousek Farms has been processing our own beef for 3 generations, so we know how good our beef is!

Kolousek Farms is offering our quality beef to the public. When family and friends try some of our beef, they can't believe the difference between our South Dakota home-raised beef and the beef you buy in the store. The difference is in the animal!

All beef are delivered to local South Dakota lockers for processing.

What would you get in a quarter of beef?

All beef cuts vary to your preferences! This is an example.

You can have your beef cut and packaged to best fit your needs in your household, but here is an example of one customer's take home.

  • 90 - 1 pound packages of ground beef
  • 10 pounds of T-Bone steaks
  • 10 - 12 oz Ribeye steaks
  • 8 pounds of sirloin steak
  • 4 Chuck Roasts - each averaging around 3 pounds
  • 2 Arm Roasts - each averaging around 3 pounds


How can this change by customer?  An example would be if you don't wants roasts, then you could have more ground beef.


If you want more roasts, varieties in steak cuts, short ribs, stew meat, brisket, soup bones and more? That can be arranged, but remember these cuts will decrease the amount of ground beef you will take home.

  • You know where you beef comes from!  We can even tell you our animal health program, if that is of interest to you.  (You currently have no idea where your beef comes from in the grocery store.)  
  • You can have your beef cut and wrapped the way that works best for your family.  Just tell the processor.
  • You are supporting a local South Dakota farm and ranch, who in turn supports the local community and school district.  Our farm has recently hired additional help, bringing another family to our Wessington Springs community.  The "trickle down" of your purchase is felt throughout our South Dakota community.
  • You are supporting the employees of the processor, all of whom are in rural communities of South Dakota.

Once you commit to a beef order (you can order a 1/4, 1/2 or whole beef), we will request a down payment to secure your order until the animals go to the locker.

We reserve dates throughout the year at lockers in eastern South Dakota, so we will let you know when our upcoming locker dates and locations are.  You can pick the delivery date/locker of your choice from our current reservations.

Once your beef order is reserved, all you have to do is tell the processor how you want your beef cut (once its at the locker) and then pickup your beef when its ready.  That's it!


We are selling our beef based on hanging weight at the locker.  ($4.50/lb X hanging weight.)  The weight is then used for calculating the total you own to Kolousek Farms for the animal.


The hanging weight is also used as a way for the locker processing your beef to determine the processing rate.  Note: Some lockers have additional fees for butchering, etc.


Kolousek Farms prefers checks, but can make other arrangements, as needed.  We will request a down payment before the beef goes to the locker. Once the beef is at the locker,  the balance due is to be paid and it must be paid in full no later than 5 days before the beef is picked up at the locker.

ALL beef must be paid in full prior to pickup at the locker.


We will give you the delivery date of the animals to the locker upon your order.  

Hanging time is VERY important to having tender beef, so expect your beef will hang for anywhere from 17-28 days after the delivery date.  

After that, the beef will be cut the way each customer requests and then frozen.  Once the beef is frozen, it is ready for pickup.  The locker will contact you once its ready.


We use lockers that not only work with us, but also work with you.  We realize how important hanging time is for your beef to have the tenderness you need.  

We use Mitchell Locker, Rattazzi's Locker (in Mitchell) and Chamberlain Locker for our processing. 

In some cases, we can take an animal to the locker of your choice, as long as the whole animal is purchased.  Contact us with questions about this.

Processing fees vary from locker to locker.
